Easy & Healthy Camping Meals

Cooking while camping is a lot of fun, and a great activity to do together, either as a couple or with the kids. There are a few criteria which we think make for a great camping breakfast, lunch or dinner.

  1. First of all, we believe camping meals should be easy to prepare. You’re on holiday after all!
  2. They should also use simple ingredients that won’t make a mess or start to smell (raw fish is a no).
  3. It’s important that camping meals are healthy. You’ll feel much more nourished after a good balanced meal than 2 minute noodles.
  4. Camping meals should also be cheap. Otherwise, you may as well be going out for dinner every night, and we all know that adds up fast!
  5. Finally, camping meals should taste good! Duh!

Below you will find 5 delicious and nutritious recipes to try while camping. Whether you prefer to cook in your campervan, or use Beachaven's fully equipped kitchen facilities, these meals are sure to go down a treat!

TIP: Each recipe should make two decent servings, so simply double them if you’re feeding the family.

Pad Thai

Ingredients

  • Rice Noodles
  • Peanut Butter (¼ Cup)
  • Soy Sauce (3 Tablespoons)
  • Lime (1)
  • Onion (1)
  • Garlic (2 Cloves)

Optional

  • Vegetables (Carrots/Capsicum/Broccoli)
  • Brown Sugar (1 Tablespoon)
  • Salt & Pepper

Instructions

  1. In a pot, cook Rice Noodles in water.
  2. In a pan, sauté Onion & Garlic, then add chopped vegetables.
  3. In a bowl, mix together Peanut Butter, Soy Sauce, Lime, Sugar and a splash of Hot Water.
  4. Drain Rice Noodles and add to the pan. Mix together and add Salt & Pepper.

Pesto Pasta

Ingredients

  • Pasta (1 Cup)
  • Onion (Half)
  • Garlic (2 Cloves)
  • Sundried Tomatoes (¼ Cup)
  • Pesto (100g)
  • Salt & Pepper

Optional

  • Cheese
  • Fresh Herbs
  • Cherry Tomatoes
  • Capsicum

Instructions

  1. Put all ingredients into a pot except Cheese & Herbs.
  2. Add approximately 1 cup of Water and cook at a high heat
  3. Once boiling, turn heat down and cook until Water is absorbed.
  4. Add Salt & Pepper and top with Cheese & Herbs.

Shakshuka

Ingredients

  • Eggs (4)
  • Diced Tomatoes (1 Can)
  • Onion (1)
  • Garlic (1 Clove)
  • Salt & Pepper

Optional

  • Potato (1)
  • Bread

Instructions

  1. In a pan, sauté Onion & Garlic, then add diced Potato.
  2. Push the mixture to the edges of the pan, and crack Eggs into the middle.
  3. Pour the can of Diced Tomatoes over the Onion & Potato (around the Eggs).
  4. Season with Salt & Pepper and cover the pan with a lid or plate for around 5-7 minutes.

Chicken Wraps

Ingredients

  • Chicken Breast
  • Tortillas
  • Lettuce
  • Tomato (1)
  • Cucumber (1)
  • Mushrooms
  • Grated Cheese

Optional

  • Mayonnaise
  • Salsa
  • Salt & Pepper

Instructions

  1. Slice or dice Chicken and fry in a pan until golden brown.
  2. Chop Mushrooms and add to the pan.
  3. Chop up Lettuce, Tomato & Cucumber.
  4. Spread all ingredients evenly on Tortillas, and top with optional ingredients.

Sausage Vege Hash

Ingredients

  • Sausages
  • Capsicums (2)
  • Onion (1)
  • Potatoes (2)

Optional

  • Herbs
  • Salt & Pepper

Instructions

  1. Slice Sausages into rounds, and dice Capsicums, Potatoes & Onion.
  2. Brown the sliced Sausages for around 5 minutes, then set aside.
  3. Fry Potatoes in a pan until golden brown and season with Salt & Pepper.
  4. Add diced Capsicum & Onion to the pan until softened, then mix through Sausages.
